French Onion Soup | French Toast Recipe

French peas sauce is a classic base sauce with many uses. The base French Pea Sauce can be spiced differently for various dishes. Try adding some mint to have with lamb, sorrel with salmon, basil and cilantro with spicy dishes, extra garlic and horseradish with corned beef.

French Pea Sauce Recipe
1 tablespoon olive oil
¼ cup diced white onions
1 clove garlic, minced
6 ounces fresh peas, shelled
1 ½ cups stock, ( vegetable or chicken )
¼ teaspoon salt
¼ teaspoon white pepper

Heat the oil in a sauce pan, add the onion and garlic and sauté until cooked but not browned, add the peas and stock. Bring to the boil and reduce the heat, simmer for 15 minutes. Cool and then blend/ puree with an electric blender. Season with salt and pepper as needed. For a richer sauce add a spoon of sour cream.
